I bought this plant a few months ago, and much to my surprise it won't stop growing! This shoot has appeared at the top, and it seems to just keep rising, at the bottom small shoots are flowering. What do I do to maintain it? Do I cut anything back? Any idea how tall this will grow?

It's a Sempervivum, and that's 'just what they do', when they flower.

That main shoot probably won't grow much more, if any, but your plant will now begin producing offsets.

How lucky are you!! I have had my hen n' chick for years and haven't had it flower yet. If you don't like it so tall, you can cut off the long stem, peel off the lower leaves and stick it in a pot. It will root very easily and you will have a new plant.

I believe the mother plant dies after flowering, but by the time that happens, it produces many chicks to carry on.
