Cute article; nice pics; very informative.

However, I love zucchini.

Just don't cut it up and fry it in a pan like mom did...gag. Hated it! Nasty and vile and gross. Now, how do I really feel about fried zucchini (or even summer squash)??? LOL

I have a recipe for zucchini cake that is wonderful! I don't know that people would know the secret.

Or, chunk a zucchini, a summer squash and a couple tomatoes. Cook gently in a small amount of water until just a little tender. Add Italian seasoning and yummm! Nice summer food.

Thanks, April. I often slightly cook zukes with fresh tomatoes too... but not the Italian seasoning. For some reason my body dislikes something in it, so I use mostly French herbs instead.
