Is it possible to can watermelon? I found canning receipes for watermelon rinds but I dont want to can the watermelon rind.I have an over abundance of watermelon.What can I do??

Usually a food with a high water content like watermelon does not can well. May I suggest that you juice your watermelon (cut it in pieces, remove any seeds, and put into a blender or food processor) and freeze it. That way you can have it to flavor drinks all year 'round.

Watemelon rind preserves are delicious. Might ought to try a few jars.
