I am new to winter squash adn wonder..if i planted them in ny on memorial day , how large, what color and when should i harvest them?

Hubbard Squash shouldn't be harvested until after the first frost in the fall. The frost will make it sweeter. The test for any winter squash is to take your finger nail & try to pierce the skin. If you can make a mark, it is not ready. If you can't leave a mark, eat the squash.
