...(I usually cut the slices in half) and secured with a water-soaked toothpick, cooked until the bacon is done(grill, oven, m'wave or maybe bbq pit)...these are GREAT appetizers. Dunno if it was already mentioned, plan to read the article at home later.

Could you be a bit more specific at what stage you wrap the bacon around the rind? When it is raw--or when it is already pickled?

Aunt_Alice---This was a wonderful article!!!! I will e-mail it to some of my nieces and myself as well...Will try it some day. I recycle everything---but only in my compost bin. Great to know i can do something with these fruits besides that.

Very interesting; we don't eat much bacon at all but it would be a fun dish to take to a party. Thanks for mentioning it...but as Gita asked...are the pickles already done when they are bacon wrapped?

Thanks so much. No, I haven't tried it w/ any other melon rinds. Doesn't seem like there is a lot of (non-hard) rind left on the Honeydews once we scoop out the goody.

Yes - sorry, I have only (so far) used store-bought pickled w'melon rind. In fact, one brand has that appetizer recipe on the label! (I learned the recipe at the BBQ Forum years ago)
using prepared sweet-pickled w'melon rind, wrap a piece with half length slice of regular cut hickory smoked bacon(smaller pieces of w'melon can double up), Secure with water soaked wooden toothpick. Microwave, grill or broil/bake till bacon is done.
I know it sounds weird - but really, it's an awesome dish. I once tried it with pineapple chunks. They were VASTLY inferior.
Mom always used white vinegar (or the cheap not real cider vinegar from the grocery store). I only use white vinegar in my laundry and in spray bottles in the bath and kitchen.
I use cider vinegar for everything else but I can't remember if I used white or cider in the batch I made. I know mom didn't use the real "cider" vinegar from the health food store as we were too poor to afford it.
