I live in the south of the UK and am growing Burgess Buttercup squashes for the first time. They are now about 16cm in diameter; when should I harvest them? Do they keep for a long time? How should I cook them?

It is a typical winter squash. It needs to be fully matured. I pick winter squash just before frost or when the vines begin dieing. But if one is in a hurry, you can pick as soon as the rind(skin) is too hard to dent with a fingernail. It can be used as any winter squash, but while medium large, still small enough to split and bake like an Acorn squash. Otherwise pies, soups, purries etc. Just google winter squash recipes and you will find enough to keep you busy for a couple of years.

Thanks Farmerdill! The vines (I have 3) are still green and climbing for England, so I'll just leave the fruit on until it looks like the right time to pick them.
