My mother used to make them too and as they author said, "we were never rich but at times ate like millionaires." We had a large dairy farm on which my grandfather had an acre of raspberries, 1/2 acre of strawberries and 1/2 acre of other veggies. In a separate little garden was nothing but the vining plants, squash, pumpkin, muskmelon and cantelope, but his watermelon was always the best. I couldn't wait until the Fourth of July when we ate watermelon at the family picnic. The next day mom was busy making the first batch of pickles of the year. I even drank the brine! Grandpa has been gone since 1970, but memories of his bountiful gardens will never leave. Yes, it's cabbage!
I was the oldest of 8 children. We were considered needy. We had cows and chickens and a small garden. My mom found the time and money for sugar. We feasted like royalty on those delicious watermelon pickles and the other cannings she supplied for us. She is not with us anymore so I want to thank you for the recipe and picture instructions. I just bought a melon and can hardly wait to pickle the rind. I just finished a batch of whole fig preserves so I am in the mood. Thanks for the memories.
