I was wondering if any one has frozen zucchini after stir frying in oil? I make this casserole with just oil fried zuch, onions, tomatoes, fresh herbs then top with cheese and bake. This freezes ok but wanted to try the zuchs alone this year????? thanks Trish

I think you'd get mushy zuke when it thaws...
