The humble ipomoea batatas is the sweet potato.

As an excellent source of vitamin A (in the form of beta-carotene) and a very good source of vitamin C, sweet potatoes have healing properties as an antioxidant food. Both beta-carotene and vitamin C are very powerful antioxidants that work in the body to eliminate free radicals and keep you looking and feeling young longer

In addition, sweet potatoes are a good source of vitamin B6, which is good for stress, wrinkles and hair loss, having a little extra vitamin B6 on hand is a good idea.

A thick slice of sweet potato pie with goji berries is one dessert guaranteed to satisfy your whole body, not just your sweet tooth; it's a virtual fountain of youth.

I am sure that there must be other sweet potato recipes, share yours because I am a fan of them

Here is a recipe one of my American friends sent me; there might be a few variations but this one is a dessert best served cold.

What a better way to end a day in the garden when you have been digging and battling your vines then to tuck into some sweet potato pie with amazing goji berries renowned for restorative effects.

Goji berries contain 18 kinds of amino acids and contain all 8 essential amino acids (the building blocks for complete protein)

Ingredients:
• 2 large sweet potatoes (about 1lb in weight)
• Handful goji berries
• 1 stick cinnamon
• 1/2 Cup butter, softened
• 1 Cup white sugar
• 1/2 Cup milk
• 2 Eggs, beaten
• 1/2 tsp Ground nutmeg
• 1/2 tsp Ground cinnamon
• 1 tsp Vanilla extract
• 1 (9 inch) Unbaked pie crust
• Fresh cream, for serving

How to make Sweet Potato Pie:

• Take a hammer and crush 1 stick of cinnamon

• Place the sweet potatoes whole with the skin and place them a pot of boiling water for about 45 minutes to 1 hour. Throw in the broken cinnamon stick. Watch them carefully to make sure they are just simmering otherwhise they will boil over. Poke them a few times with a fork to make sure they are cooked throughly.

• Run cold water over the steaming potatoes, carefully remove the skin and discard the cinnamon stick. Be careful they are going to be steaming for a while

• Mash the potatoes in a bowl.

• Add butter and mix well in a mixer

• Stir in sugar, milk, eggs, nutmeg, cinnamon, goji berries and vanilla.

• Beat on medium speed, until mixture is smooth.

• Pour filling onto the unbaked pie crust.

• Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes. Check on it once in a while to make sure it's bubbly away nicely but not burning

• Pie will puff up like a soufflé, steam will come out the top and then, it will sink down as it cools.

• Serve with fresh cream

Sit back and relax in your garden studying your morning glories...Bon appetite!
