Thanks for reviving this great recipe in your article. I had misplaced it so will now save it to a more accessible spot. Many years ago someone suggested adding a little honey rather than sugar to home cooked sauces. It does indeed mellow the sauce or make it less acidic tasting. Like DLancer no extra tomatoes this year to cook up but look forward to next year!

Some batches need the extra sugar more than others... I'll try honey with my next batch of roasty sauce... with "regular" spaghetti sauce, we've decided we like white sugar best.

it doesn't take much, so keep adding & tasting!
