if you have tomatoes and basil in yr gardenyou can have a tasty fresh tomato sce in minutes. in a 4 cup measuring cup put 1 1/4 lbs( a little over 2 cups cut up plum or regular tomatoes and 1/4 c tightly packed basil leaves washed and chopped up and a clove of garlic chopped up. cover. microwave on hi for 5 min and then run it thru fd processor w/ a little salt and pepper. BUT to this mixture i add 1T olive oil, some chives, some chopped gr pepper, cel salt and some herb vinegar before cooking and processing.
. then freeze it in small amounts . this is very nice w.lots of dishes.
Nice! If it came out thinner than you'd like (some tomatoes are pretty juicy), you could probably add a bit of canned tomato paste and nobody would know (the fresh tomato flavor is the strongest -- just be sure to heat a few minutes to cook out that "raw canned" flavor).
if you want to try the roasted sauce, you can also freeze smaller amounts of tomatoes & then toss the frozen tomatoes together with any fresh for a batch.
Thin works great for a lot of dishes, though... I think I'd freeze it as you described and "beef it up" with a little can of tomato paste while defrosting it if you want a thicker sauce. I do something similar with previously-frozen bruschetta, draining the juice off and cooking briefly with tomato paste to thicken it before adding the chopped tomatoes.
