I have gathered that some growers here only go to market on Saturday - and I know that some farmers markets are only open on Saturday. We are considering the possibility of changing from M, W and Friday mornings to Sat only next year so our young people, who benefit most from the project, can run the market themselves.

But I don't understand how to do this and still have fresh produce, since most things have to be picked every other day or so. We have a 6X4 walk-in cold box where we keep stuff at 50 degrees overnight and 48 hrs from Sat to Monday morning. Weekly picking would be okay for a lot of stuff, but how do y'all handle squash, cucumbers and okra?

I'm trying to put the logistics of this together in my aging and increasingly garbled head and would appreciate any input.
