I love pickled eggs - and my birds have given me plenty to work with.. I like pickled beets... plenty of them too..horseradish - just dug some up.
I have had pickled eggs and beets for easter way back - I want to make them at home but all the recipies i find call for canned beet juice and say keep in fridge, I have not ever found a long term sealable canning recipe for eggs.
2 questions -
1. can I water bath can the eggs - or is the fridge the best way?
2. What is the best way to jar up fresh beets (not canned) and eggs to serve with fresh ground horseradish at thanksgiving that will give the eggs that nice decorative purple ring?
