we have Brassica oleracea var Kadmi.Known localally as Hakk The leaves of this brasica are smaller. It is washed as u did and the leafy portion severed from midrib. In summer the midrib is discarded.The vegetable hakk is cooked in a variety of forms . The simplest and fastest is the Batahakk. In a pressor cooker it cooks faster , u can cook it in any cooking vessel. Add 2spons of mustard oil to 4 cups of water add the leaves of hak to it and mix well. The oil covers theleaves evenly in cold water add 2 fresh red chillies 2 garlic cloves and salt to tasteand start cooking on highflame. Go on stiring till it boils. Apply pressure cooker lid and let it cook for 5 minutes after first pressure release. Stop cooking and let it cool. The hakk is ready to be served .Usually eaten with rice or backed bread the Nan.
