I am currently in negotiations with the city to convert a historic railroad depot into a year round market and cafe. I'm interested in hearing from any of you that sell to stores or restaurants or otherwise wholesale. As a producer, I have only done direct marketing because it put more money in my pocket and had less hassles. We have had several restaurants approach us about our tomatoes but discussions always broke down over pricing.
However, I am looking at this from the other side now. The market will feature the produce from local growers only and I am at a lost as to what I should expect in terms of pricing. On the one hand, I am a firm believer in the fact that producers need to make a living wage and not be subjected to a pricing structure designed for commodity growers. But on the other hand, I gotta pay the rent and make a buck myself.
If anyone has any ideas, suggestions or recommendations, I'd appreciate it.
