I just cut all my basil to put up. I found a great way other than the usual drying to store fresh cut basil. I did it a few years ago and it has worked just great.
I put the fresh leaves I pull off the cut plant into a blender with enough olive oil to make a thick puree. After I almost filled the blender from all my basil leaves, I pour them into ice cube trays, about 2/3 or 3/4 full. Then I top each cube with olive oil. Then freeze. The next day, I remove and store all cubes in a freezer bag and put back in the freezer for future use. I just pop a cube into a sauce recipe or whatever else that calls for basil and what a great fresh basil taste! They last a long time.
