On the 5th of November in the U.K. we celebrate the gunpowder plot, of 1605.
Where Guy Fawkes and other conspirators attempted to blow up the Palace of Westminster, in an attempt to kill the King and the nobility inside.
He was caught on a cellar search by the Palace guards, with 1800 pounds of gunpowder concealed in barrels.
Bonfires and fireworks are allowed and we also have some food to eat or cook on the fire. Homemade Tomato soup, baked potato's cooked in the embers of the fires, and Parkin.
Parkin is a ginger based slab cake, ideal for eating in the cold outside, on the night.

PARKIN RECIPE (Grandmas one).
12ozs golden syrup.
4 and half ozs unsalted butter.
9 ozs plain flour.
Half teaspoon salt.
1 3/4 teaspoons bicarbonate of soda.
2 level teaspoons ground ginger, or more if you like it hotter!
Half teaspoon mixed spice.
1 small egg.
Half a pint of milk.
7x11 inch tin for this.
Grease the tin thoroughly and line with parchment paper and grease that too.
Weigh syrup, then add butter, in small saucepan melt the two together over a gentle heat until butter has melted. Meanwhile measure the dry ingredients into a bowl then gradually pour into the syrup mixture, mixing thoroughly. When all thats is done, beat egg and milk together then add this little by little. This will be a very runny batter, but dont worry, pour into the tin and bake at gas mark 4-350℉ for 50 minutes or till centre is springy. Cool in tins for 5 minutes before turning out on to a wire cooling tray.
When cold cut into squares. If there are is left it keeps well in a normal tin, it is in fact like any ginger cake, better after a few days.
Please do not think that this comes out as a tall cake, it is only a slab cake, ideal in its flat squares for eating watching the fireworks, on a cold night.
