I have a relative coming to stay for the holidays who is vegetarian (not vegan). Does anyone have a good vegetarian chili recipe? I would like one that is not mostly beans, I get indigestion just thinking about three-bean chili LOL.

Any suggestions are much appreciated.

In the Daves Garden Cookbook, soup and sandwich chapter, Terry posted a Vegetarian Chili (has chicken broth, but you can use vegetable broth), no beans. Our family has enjoyed it for years.
