This is delicious apple cake...got the recipe from a friend over 30 years ago.
Harvest Apple Cake
4 cups diced apples
2 cups sugar
3 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
2 eggs
1 cup canola oil
1 tsp. vanilla
1/2 cup chopped nuts ( if desired )
Mix the apples and sugar together and let set an hour.
Beat the eggs and oil together and add the vanilla. Stir into the apples.
Mix the dry ingredients together and stir into the apple mixture. Add the nuts.
Bake in a greased and floured 10 inch tube pan @ 350 degrees, 1 hour or until done.
I used bread pans this time as I was giving one loaf away.
