    Still looking for creative and easy ways to use leftover turkey?????
    Make Turkey Fried Rice.

    Here is an easy recipe to use leftover turkey (or any leftover cooked meat) that everyone will love (no more "Turkey Again!!!!"). Serve with a salad or a bowl of vegetable soup, yum!!!!!

    TURKEY FRIED RICE
    4 cups cooled cooked rice, white or brown
    2 (or more) eggs, scrambled
    2 (or more or less) cups diced or coarsely chopped turkey
    2/3 (more or less) cups thawed frozen peas & carrots (or any leftover vegetables - Brussel sprouts, broccoli, asparagus, celery ...)
    1 scallion, thinly sliced (use both green and white parts)
    1 tablespoon soy sauce or to taste
    salt to taste
    ground black or white pepper to taste
    1 - 2 teaspoon sesame oil (optional) or to taste

    1. Add oil to preheat wok or frying pan. Add rice. Stir-fry until rice is coated with oil and heated through. Stir in soy sauce.
    2. Add turkey and peas & carrots to rice. Stir-fry until heated throough.
    3. Stir in scrambled eggs and scallion. Add salt and pepper to taste and sesame oil, if using. Enjoy!!!!!

    NOTE: If you like your fried rice to have a dark color, you need to use dark or mushroom dark soy sauce.
    Still have leftover cranberry sauce? Toss it in. Chestnuts are good also. Toasted nuts and seeds are good additions.
    Fried rice is a great recipe when you have a little bit of this and a little bit of that. Just combine everything, and bingo, you have a delicious meal.
