A nutritious, simple and cheap Irish dish is Colcannon.
6 large potatoes, peeled, steamed and mashed
3 large Kale leaves, chopped , steamed and drained
Mix the two together
Oil a 9 inch by 13 inch casserole dish
Spread mixture into casserole.
With back of spoon, make 8 depressions in mix
Crack a small egg into each depression
Bake at 350 ºF until eggs are your consistency
Cut into squares and serve.
You could substitute instant potatoes or frozen hash browns and also chopped spinach instead of kale.
