Where do you plant your clumps without tags since height is so variable?

I have two with missing labels and haven't a clue as to which ones they are.

I have a few smaller misc. beds that have room for whatever I choose that year/season to plant. This year, I did NOIDS, lol. Strangely, or accidentally is more like it, it worked out. The few in front are shorter and the ones in back are tall. Random luck, I'm sure.

What happens if you repeatedly chop say a 5' or 6' variety? Will you just get more laterals, but later than if you had just let it grow to it's natural height?
