I used to cut back my pampas grass in the fall. Until one winter I discovered that the birds love the seed heads. The junco's and sparrows will strip them of every last seed. It is also amusing to see them swaying on the stalks in the cold breezes when everything else is covered in snow. Leave the stalks and heads for the birds! Cut them back in the spring.
