    Usually grapes are so sweet that you don't really need to add sugar. If you want your preserves to taste as fruity as possible, don't add water. I heat fruits & juices enough to pasteurize them and then add a little honey after removing from heat. For a thickener, I use agar & freeze, so I don't spend the month of August over a hot stove!
