    Do these need to be refrigerated after opening a jar, or are they shelf stable for the entire time?

    Judy,
    They are shelf stable if you keep them in a cool and dark environment and the tomatoes under the olive oil, which may need to be replenished occasionally. If you have any doubts at all, you should refrigerate the remainder of a jar just to be safe.
