Gee, my collards aren't bitter... My favorite way to prepare them IF I can find the meat is to simmer collards, kale, and mustard (sometimes I throw in turnip greens too or small beets) with ham shanks---NOT hocks---or a small picnic ham. I cook the meat for half an hour or so in a 2-3 cups of water, take off the excess fat in the liquid , and then throw in all the greens with a few small hot chiles. Let all this cook very slowly for an hour. Great stuff. This recipe is one of the great advantages to growing your own vegetables. You can come up with wonderful combinations of greens.

Very similar recipe here, but along with greens we are likely to have carrots, onions and maybe even potatoes. Now I'm hungry . . .

Good hint for washing 'buggy' greens, dissolve a bit of salt in a cup of hot water and mix into a sink full of wash water for your greens. The salt makes any bugs curl up and let go of your dinner so they fall off the leaf and then you can rinse and be sure you're not getting a protein overload with your greens.
