Great article. I'll be planting some burnet this spring. You mentioned freezing the fresh leaves. I wonder how well this will work and if the leaves will retain their freshness and not turn to mush.
I think the freezing would be best for those bits of burnet that are to be used as spices to flavor dressings and such. Only the fresh would be good in salads.
