DH & I had a very good Caesar salad ib a restaurant, so I went searching for a recipe for the dressing. I tried this one & it was really very good! I used anchovy paste instead of canned anchovies - about a teaspoon, and I only used only about 1 tablespoon of lemon juice. My DH, who normally doesn't like salads, ate this 3 days in a row!!
Caesar Salad Dressing
2 eggs
1/2 c. olive oil
3.0 tablespoons lemon juice
3/4 c. shredded Parmesan cheese
1/2 can flat anchovies
1 cloves garlic
1 1/2 teaspoons salt
1/2 teaspoon dry mustard
Combine all in blender. Serve with croutons and Romaine lettuce. Makes approximately 1 cup dressing. Everyone LOVES this dressing.
