    when I was little my Mom used to add beets to her potato salad. After boiling potatoes, beets and eggs together, the end result was a pink salad. Girlie me should have liked the pink fare but no--hated it with a passion. They tasted liked dirt! Don't know when it happened, but I adore them now and eat them at least twice a week.

    Thank you for your great article. They are not terriby expensive in my area, but I really should try to grown some in my garden. After all, there's no greater thrill than eating something you grew.
