Sorry for the confusion. Yes, all kale is edible. You will not get sick from eating the ornamental varieties of kale, they just don't taste as good.

Where as the Kale varieties that are breed to eat are really, and I mean really good!
I have a question?
Is the varieties like Russian type Kale and those with big stalks as good as the smaller types? They say to cut the leaf off the steam, but how are they after you do?

They are wonderful! But yes, like chard, you should remove the stem.
