We had a number of people move to this area after Katrina. So we were getting requests for Kale & Collards at our FM. Because we like to accommodate people, we started growing both. Collards never did take off, but, boy the Kale did. We grow Winterbor & pick the leaves off. Here that gives us production from early July until November. It is getting so popular, we will be planting a larger amount this coming year.

I guess greens such as kale and collards have been considered more "Southern" for a long time. Glad to see some of these Katrina transplants spreading the good word! You may want to also try growing Mustard greens - they are pretty hardy and very tasty.
