Hi Marie, Happy New Year and good gardening in 2012. I have used these beans in my cooking and can really appreciate their good taste alone or in a salad with other vegetables. I have a type A food regimen so the beans are one of the recommendations for me to have with other beans that are less acidic and more alkaline which makes them easier to digest. When it comes to cooking them I always soak them overnight and then use them the next day for my meal preparation.
