    Diane,
    I was once told by a good friend and chef that the red pistachios are dyed that color to hide their imperfections. Can you shed any light on this?

    Yes this is true,do buy fresh ones from the store, if you see black spots on the shells,try not to buy them,most of the time they are ok,but why take the chance.
