My first year with these, have the following questions, any help appreciated

How big do you let them get on plant?
Do you pick them green?
How do i tell when they are ready to be picked?

right now they are about 3 to 4 inches long and a lovely green color. they seem to be very prolific and the germination rate was really high.

thank you
