Beginner Gardening: Pruning an American Beautyberry

A friend wants me to take three of her American Beautyberry plants that are in containers, because she will be moving soon and can't take them with her. It is August in Texas, so very hot and dry right now. Can I prune the plants back so the stems don't break while traveling in the back of a truck at highway speeds? And, if I can, will it come back easily or will it struggle? It will mean pruning off almost all of the berries that are currently on it.
