how would you use the espresso ?.

A glaze for beef or pork. An example would be ribs or a roast. Also, a small amount in a tomato based sauce to enrich. Think chili or BBQ sauce when there is a coffee component and an acid.

Well, I wouldn't have thought of that but it sounds like it would be a go!

I wanted to try the dark chocolate over oranges in a salad -- but was drawing a blank with espresso. Prob would have hit the computer for suggestions.

After additional thought I've considered poached pears, baked apples with spices and bananas sauteed in butter would be good candidates under the espresso balsamic. Don't know how your product comes, but I'd probably reduce it to a syrup and sweeten if necessary.
