    Jill, I made this stew today, leaving out the wine and the rosemary, and adding a great big beet. I pondered whether or not to add the beet, because the 'rustic' stew would be 'pink', but I went ahead and did it. The tomatoes made up for the possibility of pink broth. It all looks like a tomato broth.

    We will enjoy it for several days. Thanks for your article. It was time to try something new. I've never really cooked with 'fresh' beets before, or with parsnips. So this has been an learning experience.

    Good for you! If you get tired of it before it's gone, this kind of soup/stew always freezes well too. :-)
