okay all ya'll venison lovers. In the past I've usually bought some cheap pork sausage and ground it up w/my deer meat to make deer sausage, or rather deer burger. Some yrs back I just got some beef fat from the grocery store and used it. I tried different amounts and only one ratio came out delicious! (I think I went by the fact that beef burger is roughly 23% fat. So, to make 10# of deer burger use 8# deer mixed with 2# fat should give roughly the same equivalent.) Question here is: what is your favorite ratio for making mighty fine deerburger? And do you stick w/beef fat? Pork fat? Pork sausage?
