Absolute favorite for cutting?

Murfreesboro, TN(Zone 7a)

I've got a new cutting bed this year - it's in full sun, soil was amended this fall, but it's still just so-so (one year of amendments, but not ready for perennials yet).

I've got plenty of room to fill in, so I'm looking for ideas for annuals or biennials, with two key critera:

1) easy-to-grow (preferably) in full sun, clayey soil; and
2) good in arrangements (long-lasting and/or fragrant)

Suggestions, please :)
