The botanic garden in Dublin has a pond house which houses this and the huge leaved water Lily who's name evades me just now. The one that a child can sit on. When I was last there the leaves were only the size of dinner plates.
Well, this plant seems to like hot, sunny/partialy shaded places, around 30 cm to 1 m depth, with organic soil on the botton. Flowing water (including fountains, waterfalls, and any stronger water flows) can kill it.
You may be refering to Victoria regia (that giant leaved water lily). I had one of those in my hands once, its flowers have around 120 petals o.O and full of spines. The leaves are also full of spines in the lower surface and petiole. Nynpheae, as far a I know, donīt have spines, but I never tried to touch them to prove that...
