I took this to the KYRU and somebody wanted the recipe.

Biko, Filipino Dessert

4 cups of sweet rice soaked overnight in 6 c. cold water
1 can coconut milk
1 1/3 c. white sugar
1 1/3 c. brown sugar
3 Tbsp coconut jam

Cook soaked rice with the water with 1/2 can coconut milk and 1 1/3 c. white sugar, constantly stirring until thickened.

Grease 13 X 9 pan & press in the cooked rice.

For topping: Mix brown sugar, the rest of coconut milk and coco jam. Boil until everything melts, top the rice and bake at 350 for about 25 minutes or until topping thickens.

Mmm, looks good, but what is coconut jam and where would I get it?

Most asian stores will carry it. It comes from the Philippines and is sometimes called Coconut spread. I just dug out my jar from the fridge, it is a 12 oz. glass jar and cost $1.99.
