Am just wondering if anyone knows when/what the best time for harvesting the various herbs are at their most flavorful peak for drying. Maybe there is a chart, somewhere on the Net with this information? When are the oils and flavors at their *optimal* height? I tried drying some Oregano last year but think I picked the leaves at the wrong time. The dried stuff I bought in the supermarket seems to have a more intense flavor than what I grew. Also think that maybe the variety has something to do with it?
