just wanted to pass along this recipe for hot peppers which i make all the time. depending on the hot pepper you use you can either make it killer hot to mild hot and anything in between.

take as many hot peppers as you want and either dice them up or put them in a blender to dice.
take one red bell pepper and one yellow bell pepper and slice them both thin.

put the hot and bell peppers in a pot. add vegetable oil to about 1 inch above the peppers.

take a pepper grinder and make 16 turns into the pot. now add 1/2 tsp kosher salt. next is 1 tbl hot pepper flakes.

put the heat on high and bring the mixture to a boil. before it boils take two large garlic cloves and dice them. once the mixture boils, lower the heat to simmer and and leave the pot on for 5 more minutes.

remove from heat and add the garlic and give it a good stir. let cool. once its cooled, put it into a jar of some kind. cover and leave on the counter for 1 week. after a week you can use it. if you want little heat, just use some oil. if you want real heat use the oil and some of the diced peppers. the bell peppers gives it a good look and adds to the taste which is truly wonderful, unlike the hot sauce you usually find in the store.

if you want, before you start boiling the peppers you can add a tbl of cayanne pepper

i have kept the jar of sauce on the counter for more than a molnth and never had any problems. if you want to keep it in the fridge, take it out about 1/2 hour before you want to use it so the cloudiness with go away.
