Quelites, as it's called her in Northern New Mexico use to be very popular. Popularity has died out because it takes so long to prepare before cooking in the traditional way (stripping leaves from stems and washing well. I tried drying it and put it in our minestrone tonight. It was great. Wondering if anyone does drying. Do you have to protect drying foods from bugs or can you just hang upsided down and let them dry up. What about dust or any other airborne problems. I have lots of feverfew I would like to dry for medicinal use as well.
