This is normally not one of your more spectacular palms, but in my small garden, I don't miss much. This Dypsis fibrosa has some great color in its new frond, but only for maybe a day. Gets better, though, as it starts to sucker and get large, and then several leaves may open at the same time... 10 years from now, maybe.

A little reference guide I have says that a mature plant will reach 10'. How long will it take to get there and how well do they transplant?

No idea about how well they transplant. Probably takes about 20 years in So Cal to reach the 10' mark, if ever.
