Sometimes it may not be possible, but most hardware stores sell an EZ-OUT kit with several size drill bits and a reverse thread screw-like tool to undo the gauled-head screw.
I got mine from Sears Hardware - it has worked great on some screws, but some of the 3.5 " deck screws into green oak, did not. I wound up drilling them out with some Bad-Dog carbide bits.
