Can you put plywood flooring over particle board? That's what is under the carpet in a bedroom and I was thinking of just screwing 2'x2' pywood pieces to the particle board, but I'm not sure that'll work. Any help is appreciated!

Sure. I'd try to figure out where the joists are and get the screws to hit them, at least some of the screws. Construction adhesive is probably a good idea too.
There may already be plywood under the particle board. I don't think you can use just particle board for a sub-floor.

sbard1, It would be best to determine if there is a plywood subfloor under the OSB. If not ... then as clapa indicated ... there ought to be plywood in addition to the OSB and it ought to be thicker than 1 inch combined. The joists should also be spaced evenly and about 12 inches apart. Putting down 2ft square plywood sheets is not the most common choice of flooring and will do little to enhance a room (in terms of resale value). To be honest ... I've never heard of anyone doing this to a room. There are multiple reasons for subfloors and construction glue and the 2ft square pieces of plywood as a top flooring choice can make for many wear issues. You'll need lots of paint to fill in the cracks. You'll want to get the cracks to disappear so as to avoid catching splinters from the plywood. The only way I'd recommend 2ft square plywood as a final floor choice is if it were free and the paint nearly free. There are many flooring options that would make for better surfaces but invariably will cost more as well. As a general rule ... the floor of a room costs the most. It is not a surprise to read about individuals trying to be creative when finishing a floor like your "idea here" in this thread. Good luck.

For what purpose? 2'x2' not smart - too many fasteners, not enough span

The span doesn't matter if the subfloor is sound. 2x2 is an obvious choice because the size of plywood sheets, and lots of stores sell 2'x2' squares already cut. There's all kinds of plywood, it doesn't have to be CDX or whatever. Some marine plywoods would make excellent flooring.
