I have a recipe for a rice casserole that after serving to guests, the recipe for it is always requested. It goes as a side dish with beef, pork or chicken, just about anything.
Rice Casserole
2 cans Beef Consomme soup (Campbell's 10 1/2 oz cans)
2 cans French Onion soup (Campbell's 10 1/2 oz cans)
1 large bottle of bottom mushrooms (drained)
1 3/4 cup long grain rice (uncooked)
1 stick butter or margarine.
Combine all above ingredients in a casserole dish (uncovered) and put in 375 degree oven. Bake 20 minutes and stir ingredients again, then bake for another 40 minutes. Let set for about 10 minutes before serving. It not only tastes great, it is a very attractive dish to serve.
