We have a closet that has our well pump in it. It gets so humid in there that I've had mold/mildew problems. I took out our coats and any apparel and any books or paper so I haven't had any problems since, even though there is still that musty smell. I'm currently using damp rid, seems to help. It's such wasted space, I hate it. So here's my question... Would if be safe to store things in there in a rubbermaid bin or other air tight plastic container?

I don't see why not. I have a fairly icky basement and use plastic containers for the same reason to store the off-season clothes. Don't use cardboard boxes. You can also get some silica packets and put a piece of a dryer sheet in the containers as well.
