I have no idea what happened, but the head space on my salsa grew in the canner. I thought I had filled them to about 1/2" from the rim but when I pulled them out of the canner some of them had as much as 2" head space in them. They all sealed fine but I'm concerned that this will cause problems during storage. I have never had this happen before and I'd sure appreciate some advice from those of you with more experience.
